What "wabi" means to us
In Japanese aesthetics, wabi is the beauty of things simple, honest and unadorned. It's the perfect word for how we make sushi.
Wabi Sushi began with a single counter and a simple promise: takeaway sushi shouldn't be a compromise. No pre-packed rolls sitting in fridges for days — just rice cooked that morning, fish delivered fresh, and every piece shaped by hand.
That promise struck a chord. Today, the same kitchen philosophy runs three stores across Melbourne — on Bridge Rd in Richmond, Commercial Rd in Prahran and Glenferrie Rd in Hawthorn — each one making everything fresh, daily, on site.
